  • Fondant
    A pliable sugar recipe that is used for cake decoration, orginally from Britain.

    After being brightly coloured or tinted in light pastel shades, it is rolled and draped on the cake resulting in a beautiful porcelain finish.

    It's like edible playdoh that can be molded, and shaped.

    Fondant is also the traditional topping for elegant French petits fours.

  • Royal Icing
    A hard white icing, made from softly beaten egg whites, icing sugar (powdered sugar), and sometimes lemon or lime juice. Royal icing got its name from being used on fruitcake, which was the traditional wedding cake for English royalty.

  • Butter Cream
    It's super versatile and takes any flavour beautifully.
